A program launched by DOH and Salinas Corporation as their Corporate Social Responsibility (CSR) in promoting healthy lifestyle to reduce prevalence of lifestyle diseases particularly cardiovascular diseases, cancers, diabetes, and chronic obstructive pulmonary diseases as the key for Saving Lives, Our Lives.

This program is composed of a series of healthy lifestyle activities to be conducted on a regular basis in a barangay level and to be participated by all residents of every barangay within a municipality. The activities incorporate the 5 key components of the Healthy Lifestyle program of the Department of Health.

Arroz Caldo as a Healthy Breakfast

"So when someone ask for an Arroz Caldo serve it HOT!"

A Good Breakfast...
Hot warming broth made of rice, ginger topped with Mighty Energy Duck Egg, green onions, fried garlic with kalamansi, toyo (soy sauce) and patis (fish sauce) on the side mixed together to make thick porridge. This is a great way to eat &qoute;breakfast"e;, breaking the 8 to 12 hours fasting or without food during the night.

Warm meals in the morning stimulate and ignite our digestive tract and prepare it for the later meals. At any rate the ingredients of Arroz Caldo suggest everything invigorating in nature as well as represents presence of nutrients in the dish.

You will only need

Cooking oil (mantika)Water (tubig)
Ginger (luya)Green onions (dahon ng sibuyas)
Garlic (bawang)Kalamansi

Follow these simple A - E steps...
Add cooking oil to heavy saucepan. Saute ginger and garlic until light brown then add onions.
Be able to saute chicken parts (preferably used parts with bones) together with other ingredients.
Cook the porridge of cups of rice and cups of water (6 servings, 1.5 cup rice and 5 cups of water) separately.
Develop a thick gruel then mix it with the sauteed ginger, onions and garlic. Add more water if needed. Boil over low heat until the rice is cooked while stirring occasionally.
Egg, chopped green onions, fried garlic may serve as toppings with kalamansi and soy sauce on the side. Add drops of Nigari to complete all the needed nutrients.

Ingredients

1 large ampalaya or bitter gourd

For marinadeFor dressing
1/2 Cup Vinegar2 tablespoons pickle relish
1/4 Cup Sugar2 tablespoons red and white onions, minced
1/2 teaspoon Fidel Iodized Saltsalt and pepper to taste
pinch of pepper

How to make Ampalaya Salad

1. Slice ampalaya in half lengthwise. With a melon baller, scram off all the white membrane. Wash and dry ampalaya and keep in the refrigerator overnight.
2. Slice ampalaya thinly. Put in a bowl and sprinkle with Fidel Iodized Salt. Mash with the hand to extract juice. Wash off the salt with water and drain.
3. Put together marinade mixture in a bowl and add drained ampalaya. Marinate for 3 to 4 hours in the refrigerator.
4. Drain ampalaya very well. Mix in with the dressing ingredients and pile over a lettuce lined bowl. Serve well chilled.
